Several food trends for 2017 are connected to bread. The K's Food Trends 2017 study[1] revealed that more than half (56%) of Finnish people intend to buy more bread from local bakeries next year. Oats in all forms will be an increasingly popular ingredient next year. Alongside Pulled Oats, people will buy other oat products, such as oat bread.
In addition, up to 16 per cent of Finnish people intend to go on a diet of some kind next year - such as a gluten-free diet - in order to make themselves feel better.
The popularity of gluten-free products and oats is clearly apparent at K-citymarkets. Sales of gluten-free breads in the K-citymarket chain have increased by 17 per cent year-on-year. At the same time, sales of oat breads have risen by 8 per cent year-on-year. Stores have seen increases of approximately 10 per cent at their bakery points. While sales of bread are otherwise declining, these figures stand out.
'As a result of this trend, K-citymarkets have invested in extensive bread selections. The stores in the chain sell about 10,000 different types of bread annually. We sell a total of 67 million bread products every year. Customers can get fresh bread from our stores every day,' says Johanna Kontio, K-citymarket Chain Director.
K-citymarket is also often the local bakery in the area. 24 K-citymarkets around Finland have real bakeries, where professional bakers make bread from scratch every day. In addition, 32 K-citymarkets make bread from ready-made dough, and the remainder of the stores in the chain bake bread at their own bakery points. 86 per cent of the bread sold at K-citymarkets is from Finland.
